TOP CHEF
one of The hudSon Valley’S
most celebrated new chefs isn’t work-
ing in a trendy brasserie or historic
four star restaurant. He’s our own Chef
Moises Ortega, and he’s recently been
the subject of a few local profile pieces
highlighting the radical changes he’s
implemented in the SKS cafeteria since
becoming head chef in 2010.
The November 14, 2012 edition of
the
Times Herald-Record
featured an
article on “Chef Mo”, his training at the
Culinary Institute of America, and a
look at how he’s turned the cafeteria into
a destination dining spot. Moises was
also recently visited by
The Valley Table
for an upcoming feature on how schools
are revamping their lunch programs.
That’s a subject Moises is uniquely
qualified to speak about, having recently
added such popular features as made-to-
order paninis and a noodle bar.
So while some culinary hotspots may
be tough to get into, those of us here on
the Mountain have a standing reserva-
tion at one of the best eateries around,
three times a day.

SKS STuDENTS SuPPORT DEVELOPMENT
The STorM KinG School
has embarked on a boat building adven-
ture. Although, not as profound as the task undertaken by Noah, our humble
canoe building project seems to be taking hold. The project emerged after a
conversation among some colleagues about how to creatively involve students
in the school’s development efforts while simultaneously empowering them.
The “Mountaineers,” our Outdoor Adventure club, is hoping to expand its
offerings in the future to include canoeing, so this seemed like an interesting
way to get students excited about the idea of canoeing and maybe raise some
funds for the purchase of a few canoes. The canoe that the students are cur-
rently working on is a classic design called the “Wee Lassie” and is intended for
solo use. The process has involved students volunteering their time when they
can. Several students have helped, but a dedicated few have truly embraced
the project and continue to come week after week. In the future the hope is to
expand the canoe building program into an inter-disciplinary academic class
which would involve teachers and students from the math, science, history
and English departments. For now we are busy working to
complete the canoe to be ready for auction at the June 8
Parents’ Association fundraiser being held during Reunion
Weekend. Follow the process through the Storm King
